Romanian Marble Cake

Cris and I spent last Christmas in Romania.  This Romanian Marble Cake is perfect for the holidays, but it’s also great with a cuppa on a cold afternoon.  Today’s recipe: cold Northern Irish weather + slice of yummy marble cake + cuppa = SUCCESS!  

Ingredients – Yields 2 loaves

4 eggs
380g granulated sugar
Peel from 2 lemons
2 tsp vanilla
235ml milk
235ml vegetable oil
260g plain flour
2 tsp baking powder
Pinch of salt
2 tbsp cocoa for marbling
100g walnuts (optional)

Method

  • Preheat the oven to 180ºC.
  • In a large bowl, combine eggs, sugar, lemon peel and vanilla.  Whisk until smooth.
  • Add milk and oil to the mixture and whisk.
  • In a separate bowl, combine flour, baking powder and salt.  Once mixed together, add to the egg mixture.  Stir to combine.  Do not over stir, as stirring will develop the gluten and make the cake less fluffy.
  • Reserve 200ml of the batter for marbling.  Pour the rest of the batter into two greased pans that have been lined with baking paper.
  • Mix together the cocoa and 200ml of reserved batter.  Pour over top of both pans.  Use a skewer to lightly swirl the chocolate into the batter. Add nuts if desired.
  • Bake for about 50 minutes or until a toothpick comes out clean.  Enjoy!
