Raspberry.Blackberry.Blueberry Crumble

This is the type of Blackberry I prefer today!

Ingredients

1 1b fruit (raspberries, blackberries and/or blueberries)
1 tablespoon caster sugar
 
220g (1 3/4 cup) plain flour, sifted
110g (1/2 cup) butter, at room temperature, cut into pieces
75g (1/3 cup) light brown sugar
 

Method

  1. Pre-heat the oven to 180°C (350°F).
  2. Make the topping by adding the sifted flour into a large bowl.  Rub the butter into the flour lightly using your fingers.
  3. Once the butter is completely rubbed in forming a crumbly mixture, add the brown sugar breaking up the sugar into the flour mixture with a fork.
  4. Place the berries into a 8-9 inch circular dish.  Sprinkle the sugar over the fruit, followed by the crumble mixture.
  5. Bake on the top rack in the oven for 40 minutes or until the top is golden.  Serve with Vanilla ice cream or whipped cream.  Serves 5 happy friends!
