Pineapple Chicken Chinese Dish

Pineapple Chicken Chinese Dish


1 tbsp olive oil

3 tbsp soy sauce

1 onion

1 red pepper

1 green pepper

3 boneless, skinless chicken breasts

16 oz. can of pineapple pieces



1 tsp. vinegar

3 tbsp soy sauce

3 tbsp light brown sugar

2 tbsp cornstarch

1.      Cut chicken into 1 inch cubes.  Place chicken mixed with 3 tbsp soy sauce in a sealable container and marinate for 30 minutes in the refrigerator. 
2.      Drain pineapples, keeping the juice for the sauce.  Set aside the pineapple pieces. Add vinegar and soy sauce to juice then stir.  Then add brown sugar and stir till it has dissolved.  Add 3 tbsp water and stir.  Set aside.
3.      In a separate bowl, add cornstarch and 2-3 tbsp of water until cornstarch dissolves.   Set aside.
4.      Add oil to a skillet or wok and place on medium high heat.  Chop onion and peppers into small dices.  Stir-fry in oil for about 2-3 minutes- until onion is translucent and pepper is well cooked.   Remove.  Turn the heat to high and add chicken.  Cook chicken until tender-about 8 minutes.  Remove and place on plate with onion and peppers.  
5.      Add pineapple to the skillet and stir-fry for one minute. Then add the pineapple juice mixture and mix around till hot and bubbly.  Once hot, add the cornstarch mixture.  Stir until sauce becomes thickened.  When the sauce is thick add onion, pepper and chicken. 
6.      Serve over a hot plate of rice.  Enjoy!  Serves 4.
