The Fruit Pizza

I learned how to make this sweet and smooth dessert from my mom.  She always made it for her Sunday school class parties.  Personal pizzas can be made by rolling the sugar cookie dough into little balls, making individual cookies.  Then, decorate each one for a fun party treat!

Sugar Cookie Crust

In a small bowl combine the following with a fork:

  155 grams all-purpose flour

  1/2 teaspoon baking soda

  1/4 teaspoon baking powder

In a separate bowl cream together until smooth:

110 grams butter

  150 grams caster sugar

Add one egg and 1/2 teaspoon vanilla extract to butter mixture and whisk. Gradually pour in the dry ingredients while whisking. Once dough forms, press into two small pie dishes or one large circular pan.  Bake at 190 degrees C for 10 – 12 minutes (for small pie dishes) and 12 – 14 minutes (for large circular pan).  Let the crust cool completely.
Cream topping

Cream together 150 grams Philadelphia cheese (cream cheese) with 65 grams icing sugar (powdered sugar). Then whisk 400 ml whipping cream and fold in Philadelphia cheese mixture.  Spread over cookie crust, leaving ½ inch around the outside plain.

Creatively add mixed fruit for a fabulous finish on your Fruit Pizza!  Some fruit options: pineapple, strawberries, blueberries, kiwi, grapes, raspberries, mandarin oranges.
