Curried Carrot Soup

I found this recipe in the Williams-Sonoma “Food Made Fast” series.  Since my husband is Romanian (Romanians love soup!), I have improved greatly in making soup.  My first attempt to make soup years ago was an absolute failure, but with time and the help of recipe books, I have learned how to make soup as well as come up with my own yummy soup recipe.  This curried carrot soup is comforting on a cold day and soothing to the soul.


1 tbsp Olive oil

1 large Shallot minced (an onion would work if you don’t have a shallot)

1 ½ lb. (750 g) Carrots coarsely chopped

1 tsp. curry powder

6 cups (48 fl oz/1.5 l)chicken broth

2 tbsp. fresh orange juice

Salt and pepper


In a large saucepan over medium heat, warm the oil.  Once hot, add the shallot and sauté for about 2 minutes (until translucent).  Add the carrots, curry powder, and broth.  Raise the heat to medium-high and bring to a boil.  Once it is boiling, reduce the heat to low and cover the saucepan.  Cook for 20 minutes and then remove from heat.  Add the orange juice and puree the ingredients in a food processor or blender till smooth.  Season to taste with salt and pepper.  Serve warm.
