Oatmeal Cranberry White Chocolate Cookies

Table Talk Ministries is back in action for a new season, baking up a storm on the north coast in Limavady.  Lovely ladies came together for a Cooking For Christ cooking demo and then gathered around a large table overflowing with tea/coffee, strawberry shortcake, beautifully bursting blueberries & blackberries and OATMEAL CRANBERRY WHITE CHOCOLATE COOKIES!!!

Table Talk Ministries strongly believes in families and friends gathering around the table to engage in deep relationships while enjoying good food together.  Gathering around the table seems so ordinary, yet with time and good conversation, it becomes an extraordinary influence in people’s lives. There is something about food that brings us together.

Research has proven that eating family meals together is strongly linked to lower incidence of bad outcomes such as teenage drug and alcohol use, it also discourages both obesity and eating disorders.  Children who eat family meals improve their grades at school and have more emotional stability.  Sharing meals helps firm up family relationships.   (More statistics & info in “The Surprising Power of Family Meals.”)

Ingredients:

150 grams (2/3 cups) dark brown sugar
150 grams (2/3 cups) butter or margarine, softened
1 teaspoon vanilla
2 eggs

130 grams (1  1/2 cups) of cooking oats
190 grams (1  1/2 cups) plain/all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt

250 grams (1 cup) dried cranberries

200 grams (1  1/4 cup) white chocolate chunks

100 grams (1 cup) chopped walnuts, optional

Method:

1. Heat oven to 190° C  or  375°F.

2. Beat brown sugar and butter in a large bowl with electric mixer on medium speed about 3 minutes or until light and fluffy.

3. Beat in eggs and vanilla.  In a separate mixing bowl, combine the oats, flour, baking soda, and salt.  Add dry ingredients to butter mixture in several additions, mixing well after each addition. Stir in dried cranberries, white chocolate chunks and walnuts.

4. Drop dough into small balls on greased cookie sheet.

5. Bake 10 to 12 minutes. Allow to cool slightly on wire rack or in pan.

Makes about 32 cookies… depending on how big or small you like them!!
