Best Ever Banana Bread

What if I were to add 1 cup of vinegar to my banana bread?  What would it taste like? Bitter, sour, disgusting.  How many times have you been bitter, sour or disgusting to the people around you?  We set the tone within the home, workplace and community.  We can choose to have a good attitude and a pleasant spirit or we can choose to be bitter and sour like vinegar.

“But thanks be to God, who in Christ always leads us in triumphal procession, and through us spreads the fragrance of the knowledge of him everywhere.  For we are the aroma of Christ to God among those who are being saved and among those who are perishing” (2 Corinthians 2:14-15)

We are the aroma of Christ….    What aroma are you spreading today to your spouse, children, co-workers, & friends?  Are you bitter like vinegar or sweet like vanilla extract? 

Everyday life presents opportunities for us to make choices.  Instead of adding vinegar, I am going to choose to add vanilla extract to my banana bread. Today you have the choice to be sweet or bitter.  Today you have the choice to take something bad and change it into something good.

Just like we can take bananas that are going bad and turn them into something good –Banana Bread!

Best Ever Banana Bread


  • 4 ripe bnanas, smashed
  • 1/4 cup (55 g) melted butter
  • 3/4 cup (95 g) sugar
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cups (190 g) of flour
  • 1 cup (100g) chopped nuts (walnuts/pecans/almonds), optional

Preheat the oven to 350°F (180°C).  With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl.

Mix in the sugar, egg, and vanilla.  Sprinkle the baking soda and salt over the batter and mix in.  Add in the flour and mix well.

After adding the flour, I like to add 2 tbsp of this healthy mix. This is optional, but it adds a great dose of fiber to your diet providing you with loads of energy for the day!

Place parchment paper in  two 4×6 loaf pans.  Pour batter into the pans.  Bake for 50 minutes to an hour – until a toothpick comes out clean.  Allow the bread to cool in the pan for a couple of minutes, then remove from pan, slice and serve.

Another way I like to bake this bread is in an 8×10 pan… I cut each slice in small thin strips.
