Dark Chocolate Oatmeal Cookies

Dark Chocolate, Milk Chocolate and White Chocolate… which do you prefer?  Out of the three, I prefer milk and white chocolate!  Seems strange that I am promoting dark choc cookies?!?!  Well, one day I had left over dark chocolate from another recipe I was making.  I decided to throw the dark choc into this cookie recipe… and out came some serious goodness!!!  I now prefer dark choc cookies over milk choc cookies.  [Borrowing a Bristish word] They taste so much more posh, seriously.  It’s like Chocolate Chip cookies on steroids.  I am not kidding.

Prepare for some serious goodness….

Dark Chocolate Oatmeal Cookies

  • 150 grams (2/3 cup) dark brown sugar
  • 150 grams (2/3 cup) butter or margarine, softened
  • 1 teaspoon vanilla
  • 2 eggs
  • 130 grams (1  1/2 cups) of cooking oats
  • 190 grams (1  1/2 cups) plain/all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 200 grams (1 1/4 cups) dark chocolate chunks
  • 100 grams (1 cup) walnuts, chopped, optional

1. Heat oven to 190° C  or  375°F.

2. Beat brown sugar and butter in a large bowl with electric mixer on medium speed about three minutes or until light and fluffy.

3. Beat in eggs and vanilla.  In a separate mixing bowl, combine the oats, flour, baking soda, and salt.  Add dry ingredients to butter mixture in several additions, mixing well after each addition. Stir in the dark chocolate chunks and walnuts.

4. Drop dough into small balls on greased cookie sheet.

5. Bake 10 to 12 minutes. Allow to cool slightly on wire rack or in pan.

Makes about 32 cookies… depending on how big or small you like them!!  The best thing about this cookie dough, is that it is freezeable.  I usually make about half of the cookies, and roll up the dough in cling film/saran wrap in a long sausage like shape to freeze.  Then when company show up last minute, I pull out the frozen dough, slice it and bake the dough for about 15 minutes.  They turn out perfectly shaped and are delicious!

Don’t you just wish you could eat the picture?
