Couscous Salad

Ingredients

  • 1 cup (200 grams) dry couscous
  • 1 1/2 cups (355ml) hot vegetable or chicken stock
  • 3 tbsp red pepper pesto (or you can use ordinary green pesto)
  • 3 scallions (spring onion), chopped
  • 1 red pepper
  • 1/2 cucumber
  • 1/2 cup (2 oz or 50g) feta cheese
  • 2 tbsp pine nuts

Directions

  1. Place the dry couscous in a large bowl.  Add the hot stock and cover with a lid or plate for about 8 minutes.
  2. Meanwhile, chop the scallions, slice the red pepper into long, thin strips, dice the cucumber, and crumble the feta.  Toast the pine nuts over medium heat in a frying pan for a couple of minutes.
  3. Using a fork, stir the pesto through the couscous.  Add the scallions, pepper, cucumber, feta and pine nuts.  Enjoy!

Serves about 5 people

Hi Lindsey. Sounds like another good recipe to try. I just wanted you to know that we girls in Kells are very excited about you coming next Saturday,and some of us met tonight after church to pray for you. I was wondering did you ever find out whether you are able to get transport or not. Please let me know as soon as possible. Just as a matter of interest,do you know what you will be cooking.
