Cranberry Pecan Salad

The deep red cranberries make this salad perfect for Christmas!


  • 100g (1 cup) pecan nut halves, roughly chopped
  • 2 tablespoons white or red wine vinegar
  • 1/2 teaspoon Dijon mustard
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt
  • black pepper to taste
  • 4 tablespoons olive oil
  • 300g (4-5 cups) mixed salad greens
  • 90g (3/4 cup) dried cranberries
  • 1/2 medium red onion, thinly sliced
  • 100g (2/3 cup) crumbled feta cheese


  1. Preheat oven to 180°C (350°F). Spread pecans evenly on a baking sheet. Toast for 6 to 10 minutes, or until lightly browned.
  2. In a small bowl, stir together the vinegar, mustard, sugar, salt, and pepper; mix until sugar and salt dissolve. Whisk in olive oil.
  3. In a salad bowl, toss together the salad greens, cranberries, pecans, onions, and cheese. Drizzle with vinaigrette, and toss gently to coat.  Serves 6
