Roasted Red Pepper and Sweet Potato Soup

A Perfect Thanksgiving Soup!


  • 3 sweet red peppers, chopped
  • 2 medium sweet potatoes, peeled and cubed
  • 1 onion, chopped
  • 3 cloves garlic
  • 1 tbsp olive oil
  • 1 tsp dried Italian herb seasoning
  • Salt & Pepper to taste
  • 4  cups (940ml) vegetable broth
  • 1/2 cup (120 grams) plain yogurt
  • 2 tbsp chopped fresh parsley


  1. In a large bowl, toss together red peppers, sweet potatoes, onion, garlic, oil, Italian seasoning, salt and pepper.
  2. Roast in 410°F (210°C) oven, stirring three times, until tender, about 1 hour.
  3. In a food processor, in batches, purée vegetables with broth. Bring soup to boil; reduce heat and simmer for 4 minutes.
  4. Stir in parsley with yogurt and dollop on bowls of soup to serve.  Serves 4-5.
